With Labor Day right around the corner, summer is sadly coming to an end. This weekend marks one of the last times during the warmer months to celebrate with family, friends and good food.

This Bugs Bunny Granita is a great way to cool off during the last bit of summer. It’s a light and refreshing dessert option, made with all-natural and real ingredients.

It uses The Bugs Bunny cold-pressed juice made from carrots, oranges, lemon, and ginger. This juice is a great source of Vitamin A and K, antioxidants and potassium. It also helps your immune system, lower your cholesterol and decrease inflammation. The addition of coconut oil (healthy fats) in this recipe helps your body absorb the key nutrients present in the juice.

I love to top mine with a dash of sea salt and a little cinnamon. Enjoy!

Ingredients:

  • ¼ c Bugs Bunny CPJ
  • 1 ½ Large Ripe Bananas
  • ¼ c Coconut Milk
  • ½ tsp Vanilla Extract
  • 1 tsp Coconut Oil

Directions:
Combine all ingredients in high-speed blender for 30-45 sec. Pour mixture into glass container and cover with lid. Place container in freezer for 3-4 hours or until frozen. Once frozen, take mixture out of freezer and let set for 5-7 minutes. Using a spoon or ice cream scoop, shave granita off of the top and scoop into a bowl. Enjoy!
